Cabernet Bistro is located in the heart of the Santa Ynez Valley. Jacques & Diana Toulet, owners of Les Pyrenees Restaurant in Santa Monica for twenty years still offer their renowned duck entrees quoted by Elmer Dills as being “The Best Duck in Los Angeles.” 

Jacques came to the United States 40 years ago to join his brother Joseph Toulet who was the executive chef of the Beverly Hills Hotel for over fifteen years. Joseph and Jacques compiled their considered talents at such places as the Beverly Hills Hotel, Au Petit Jean and later recruited by the famous owners of the Factory Night Club, which was owned by Paul Newman, Jerry Ohrbach, Pierre Salinger, Peter Lawford, Sammy Davis Jr., Peter Bren, Richard Donner and Ronald Buck.

In 1974, they decided to open their own restaurant, Les Pyrenees, where in Jacques studied the art of classic French cuisine under his brother. Los Angeles Times and Gourmet Magazine quickly recognized the two dynamic brothers. They were also highly recommended by Elmer Dills and Larry Lipson as well as featured on Regis Philborn Show.

After the death of his brother Joseph, Jacques left the comfort of the front dining room and began the monumental task of replacing his brother’s shoes in the kitchen. Shortly after Jacques was hailed as one of North America’s Outstanding Chefs in 1993. He continually strives to meet the same standards set by his brother. Jacques, a highly energetic and vivacious individual in front of his clients is actually a humble and reserved person behind the stoves. Jacques often refers to himself as just a cook with a passion for good food and wine.

In 1994, Jacques sold Les Pyrenees vowing never to own another restaurant. However, with the support of his family Jacques decided to return to his love and opened Cabernet Bistro in the beautiful and tranquil Santa Ynez Valley. Jacques has returned to his passion and paradise.
